Mom always made this certain kind of candy for the holidays out of Saltine crackers and chocolate chips. It was mine and Dad's favorite, but she never wrote the recipe down, so when she passed away I regretted never having learned it from her and thought we'd never be able have it again.

Well there was a woman Dad became involved with a couple years ago (more than friends but not girlfriend/boyfriend... long story), and it was near the holidays so we were talking about cookies and such, when Dad started talking about this candy that we loved. She said it sounded like one that she had always made, so she described it to us, and lo and behold it was the same recipe!

We're no longer in contact with this woman because she was an extremely bitter person who caused us a lot of grief, but we still pray for her, and I'm thankful we met her so that we could get Mom's recipe. I know that sounds shallow, but it really means a lot to us.


2 sticks of Saltine crackers
1 stick of whole salted butter
1 cup of brown sugar
1 package of chocolate chips
Walnuts and/or pecans (optional)

Bring 1 stick of butter and 1 cup of brown sugar to a slow boil, stirring constantly (it will burn easily so stir until smooth). Have your Saltines laid out on a cookie sheet, lined with tin-foil, that has been sprayed with cooking butter, each cracker should touch the other one. Fill the whole cookie sheet. Pour brown sugar mixture over the entire sheet of crackers and smooth mixture over so they are all covered. Cover with chocolate chips and bake at 350° for 4 minutes or until all the chips are melted. If they're still lumpy you can smooth them out with the back of a spatula or spoon. Take out of the oven and sprinkle with finely chopped nuts of your choice (optional) and put in the freezer until cool, then break apart. Keep in refrigerator or freezer.

Heh, thanks. I'm endlessly confused by "laid" and "layed", and I KNEW "refridgerator" didn't look right! At least I didn't spell it how I pronounced it as a kid, "fidge-ja-jay-ter"!

Btw, I made these last night! Only, I didn't read the directions properly, so I made WAY too much of it! Seriously...two whole batches; like 80 crackers worth. Yikes. Anyway, I did keep them in the freezer, and THEY R T3H ROX00RZ!1!!1!11 OMG WTF

OUCH !!! seminal NEW southern rock (they've had tour problems though)

My hopes were on Sparklehorse (out of western VA), they even opened for Radiohead but the lead singer had a stroke from a drug over dose.

You have Three Doors Down from MS, Uncle Cracker from Memphis, err umm who else??

But wilco is standard fare (Son Volt is a branch band out of Wilco)

OHH no wonder then. I actually don't know many new bands (strange for my age, I know)! I do know Three Doors Down though, they were on a Super Bowl special on CMT with Skynyrd.

Sparklehorse sounds very familiar too!

all great, but I like the alternative turn the south took in the 80s...I even drove to Atlanta when I was sixteen (from Louisville) with my cross country team to see the Sex Pistols (though Brits) play the Great Southeastern Ballroom.

Btw, they were really, really EMU!! It wasn't the "two boxes" of Saltines that got me, it was the "box of brown sugar." Because, when you read the directions, you only need one cup. So, then I had ALL this brown-sugar and not enough butter, so I kept adding butter until I had enough to liquify the brown sugar. So, then I had TONS of the stuff, and had to add another cookie sheet worth of Saltines to use it up. Anyway, they were really yummy. My dad said, "Don't make these too often," because they're going to blow all of our diets!

And, holy crap! Look at how many comments you had on this one thing! :o)

OHHH the brown sugar. I'll fix that too, I didn't notice it, sorry about that! I also realized that by "two boxes" she must've meant the single-stick boxes, but when I made them, I... didn't take that into account, heh.

Well....at least it'll last you for a while! I'm glad your family's enjoying it too LOL

I know, there's over 30 now, holy crap!

It probably sounds crazy, but the BEST macadamia-nut cookies I've EVER had were at the cafeteria in Holy Cross Hospital.

As you know, we were at that hospital for over a month.. so every day I'd go down there and get some Snapple tea and a couple of those cookies.

I even sent some through the mail to my great uncle LOL
